Irish Soda Bread Recipe

Well, St Patrick's Day is almost here, and I always get asked about what our family cooks / eats on this occasion... This Soda Bread recipe is one that our family has made for years and I have shared countless times - I can't think of anyone who has ever come back and said it didn't work out. It's super easy. You can make dietary adjustments as needed, I've used an all purpose gluten free blend on this recipe with zero issues at all, just the need to bake it a little longer (as is typical with that flour). okay, back to it. Here's the ingredients you'll need: 4 Cups all purpose flour (plus a little extra if you're adding currants)

4 TBSP sugar 1 tsp baking soda 1 1/2 tsp salt 4 TBSP cold unsalted butter (1/2 stick) diced 1 3/4 Cup cold buttermilk, shaken 1 extra large egg, beaten 1 cup currants or sultanas (golden raisins) Preheat your oven to 375 degrees Line your baking sheet with parchmant paper

Combine flour, sugar, baking soda and salt in a mixing bowl.

Add diced butter.

Mix on low speed (or mix with your hands) until mixed into the flour. Beat the buttermilk and egg together then with mixer on low setting, slowly add to the dry ingredients. Dust currants or sultanas with flour and mix into the dough - it will be a pretty wet / loose dough. Knead slightly on a well floured surface into a rounded loaf.

Cut X into the top of the loaf with a sharp knife. Bake for 45-55 mins until it sounds hollow.
